Are you ready to get funky?  The Fermented Garlic Honey brings the funk, no boombox needed.  We've combined sliced fresh garlic, apple cider vinegar, and our Southern Wildflower honey, aged it for three months, or until we crack the lid and hear adequate FUNK.

Our Southern Wildflower is honey harvested from hives located throughout the Lowcountry of South Carolina and its flavor is a true reflection of the floral world that immediately surrounds the hives.  Combined with sliced garlic and aged for three months, the honey begins to ferment and a world of flavors is unlocked.  You don't need a map to explore these flavors; dive in. Let's get FUNKY.

Welcome to the Funkfest: Fermented Garlic Honey

     At Apis Mercantile, we pride ourselves on having a fresh perspective on a pantry staple: honey.  The Fermented Garlic Honey is our latest take!  We've combined a generous portion of sliced fresh garlic, apple cider vinegar, and our Southern Wildflower honey.  Aged for three months, the flavors of the honey and garlic meld together to create umami goodness. 

     Honey is naturally hygroscopic, which means that it tends to absorb moisture from the air and its immediate surroundings.  When the honey is combined with freshly sliced garlic, yeast that would otherwise lie dormant in the raw honey, is activated as the water content increases, setting off a fermentation process. This process create a funkfest of flavor.
