High Wire Distilling Co. x Apis Mercantile's Bee's Knees Cocktail

The Bee's Knees cocktail has been around since the 20s, when bathtub gin was popular and people decided to add honey to make their cocktails a bit more palatable. Different takes on the classic cocktail have emerged since. The best part about this drink is that it only needs three ingredients, but the flavor profile can change depending on what type of honey and gin you use! 

Apis Mercantile partnered with High Wire Distilling Co. in Charleston, SC to source charred White American Oak barrels still-wet with bourbon and used them to age our Wildflower and Orange Blossom honey for over three months. After aging, the honey is left with an oaky, bourbon flavor that will bring your Bee's Knees cocktail to the next level! 

Ingredient List:

2oz High Wire Distilling Co. Hat Trick Gin- this gin is particularly botanical forward, pairing perfectly with our floral honey

3/4oz Apis Mercantile's Bourbon Barrel-Aged Honey simple syrup* 

3/4oz fresh lemon juice

Dehydrated or fresh lemon wheel as garnish 

*to make a honey simple syrup, combine equal parts warm water with Apis Mercantile's Bourbon Barrel-Aged Honey. 


1. Add Hat Trick Gin, Bourbon Barrel-Aged honey simple syrup, and fresh squeezed lemon juice to a cocktail shaker. Add ice. 

2. Shake and strain into coupe cocktail glass. 

3. Garnish with lemon wheel and enjoy!
